Balsamic Cranberry Sauce with Caramelized Onions

Active Time:  15 minutes  Total time:  1 hour, 15 minutes  Serves 12 (2 Tbsp per person)

Perfect for the holidays, this is a refined sugar free alternative to the traditional, sweeter versions.  It tastes even better a day or two after it’s made.

1/3 cup extra virgin olive oil

4 cups chopped sweet onions

1 tsp salt

1/4 cup honey

1/4 tsp black pepper

2 fresh thyme sprigs

1 12 oz. pkg fresh cranberries

1 Tbsp balsamic vinegar

Heat oil in large heavy saucepan over medium.  Add onions and salt.  Cover and cook 30 minutes or until caramelized.  Add honey, pepper, thyme and cranberries.  Book, uncovered, 30 minutes or until cranberries break down and mixture is syrupy.

Remove pan from heat and discard thyme sprigs.  Stir in vinegar and you’re done!
